I arrived in Chiang Mai in the early hours of the morning. Refreshed from decent nights sleep on the (surprisingly) comfortable overnight bus. Strange I know, but one of my strengths especially while travelling is the ability to happily sleep ANYWHERE, especially if I am tired, and after a full day in Bangkok, I was TIRED.
Located the hostel, and took a quick shower, and then it was off to see the temples! Chiang Mai, especially Old Town, is known for its many beautiful and unique temples, I was lucky enough to stay near about a dozen, although in reality with 48 within Old City, I would challenge anyone to find a hostel away from the temples.
Mai Kaidee Cooking School
One of the highlights of Chiang Mai was the cooking class. Those of you that follow me on Instagram, got a sneak peek of the afternoon. Myself and 3 other couples spent four hours learning the basics of making vegetarian Thai food. I knew the class would be great when it started off with the teachers “secret recipe” for tom yam curry paste. From there we made peanut sauce, two kinds of soup, pad thai, two different curries, appetizers and of course we finished with mango sticky rice. I ate and ate and ate and shameless requested to pack all of the leftovers for my next meals.
Street Food
While Chiang Mai became all about walking for me, I also had the great gift of a Thai roommate, who helped me navigate a night market and ensured that every new thing I tried was vegetarian! Thailand is all about the street food, and Chiang Mai has some of the cheapest and tastiest options out there. I tried anything and everything I could, from fried potato balls, and curries to giant spring rolls and of course more banana “pancakes” than I can count. It’s a good thing that each day, I averaged well about 10 miles of walking.
